ALMOND BUTTER CUP PROTEIN BALLS
Why to make these:
- they take 5 mins
- they are packed with protein
- they are good for breakfast running out the door, a sweet snack when you’re just craving a little something, or dessert when you’re getting hungry after dinner but don’t want to eat a whole thing
1/2 cup protein powder (preferably organic, vegan, gluten-free, plant-based!)
1/4 cup almond butter
1/4 cup brown rice syrup
1/4 cup chia seeds
1/4 cup cacao nibs
-Add almond butter, brown rice syrup, and protein powder to blender or food processor and blend. This is just to get them all really well combined.
-Plop that mixture in a medium sized bowl, then add the chia seeds and cacao nibs. You can add in anything else here you’d like (I added in some maca for good measure)
-Roll into little balls, then pop them in a tupperware and stick them in your fridge – ready to pop into your mouth whenever you need one!
